Sambar

Serving: 4-6 Preparation time: 40 mins Ingredients: For the sambar: Red gram: 1 cup Tomato: 1 Onion: 1 Brinjals: 2 Drumstick: 1 Potato: 1 Tamarind pulp: 1 tb Salt: To taste For the sambar masala: Red chillies: 6 to 8 Coriander seeds: 1 tb Fenugreek seeds: 1 ts Red gram: 1 tb Split Bengal gram: 1 tb Split black gram: 1 tb Turmeric powder: 1 ts Asafoetida: 1/2 ts Oil: 1 ts For the tempering: Mustard seeds: 1 ts Curry leaves: 6 Asafoetida: 1/4 ts Oil: 2 tb The Steps: Pre - Preparation : 1) Chop the tomato and onion. 2) Cube the brinjals. 3) Quarter the drumstick. 4) Peel and cube the potato. Preparation : For the sambar masala: 1) Heat the oil and roast all the ingredients for the sambar masala in it. 2) Grind to a fine paste in a blender using a little water. Keep aside. 3) Wash and pressure-cook the gram, tomato, onion, brinjals, drumstick and potato with 2 cups of water. 4) Then add the tamarind pulp, sambar masala, salt and 4 cups of water and bring to a boil. 5) Prepare the tempering by heating the oil and frying the mustard seeds, curry leaves and asafoetida until the mustard seeds crackle. 6) Add this to the sambar and simmer for 15 minutes. 7) Serve hot Calories: 180 Suggested Accompaniments: Rice, idli, uttapam, dosa.
