Potato Toast
Cooking Time : 25 Minutes
Serves 4
Ingredients:
2 medium sized potatoes (for 2 people)
Spicy coconut chutney
some gram flour or bread slices,
salt,
oil for frying,
Method:
1. Boil potatoes and mash them.
2. Add gram flour to the mashed potatoes or soak bread slices in the water, mash and add them to the potatoes.
3. Add salt and make a soft dough.
4. Take some mixture out of this dough and make equal small round balls using some oil. Flatten one ball and place some coconut chutney in the middle. Join the edges of the ball with oil. Trim extra part of edges to get smooth round shaped patties. You can also make square shaped patties.
5. Heat some oil in a pan. Deep fry these stuffed balls till golden brown and crispy. If you see them breaking in the oil, add some more gram flour or bread slices to the dough for proper binding.
Serve hot.
