Ingredients

1.olive oil……………………6 tablespoons
2.Garlic (chopped)…………..2 cloves
3.Fresh ginger root ………….1 tablespoon (grated)
4.Dried red chili peppers……. 2
5.Onion (finely chopped)……1/2 cup
6./var/www/hin (ground)…………...2 teaspoons
7.Coriander (ground)………..1 teaspoon
8.Turmeric (ground)………...1 teaspoon
9.Sour cream ………………..3/4 cup
10.Fresh spinach, torn………...3 pounds
11.Tomato (quartered )……….1 large
12.Sprigs fresh cilantro leaves..4
13.Ricotta cheese……………..8 ounces
14.Coarse sea salt…………….to taste

Method

1.In a large saucepan heat 3 tablespoons of olive oil and saute garlic, 1/2 tablespoon of ginger, red chilies and onion until brown.
2.Mix in the , coriander, turmeric and sour cream (add more or less as desired).
3.Add the spinach, handfuls at a time until it is cooked down, about 15 minutes total.
4.Remove from heat and allow to cool slightly.
5.Pour spinach mixture into a blender or food processor and add the tomato, the remaining 1/2 tablespoon of ginger, and cilantro (to taste). Blend for 15 to 30 seconds, or until the spinach is finely chopped.
6.Pour back into the saucepan and keep warm over low heat.
7.In a medium frying pan heat 3 tablespoons of olive oil over medium heat, and fry cheese until browned; drain and add to spinach.
8.Cook for 10 minutes on low heat.
9.Season with salt to taste.
