Paatraa (gujrati special)

Cooking time: As Required 

Serves : 4

Ingredients :

10-15 Colocasia leaves
1 cup gram Flour (besan)
1/4 cup jawar Flour (optional)
2 Green Chillies or 2 tsp red chilly powder
1 tbsp Jaggery
1 tsp Tamarind (seedless) juice
1/2 tsp Turmeric powder
2 pinch of Asafoetida (hing)
1/2 cup Coriander leaves chopped or 1tsp Coriander seed powder
Salt to taste
2 tbsp oil
1 tsp Mustard seeds
1 tsp  seeds

Method :

1-Wash clean and wipe the leaves and cut the thick veins of it. Keep aside.
2-Then take besan in a vessel and mix in it the jawar flour.
3-Now add in it, crushed green chillies or the red chilly powder and turmeric powder.
4-Add hing, jaggery, tamarind, coriander leaves and salt to it.
5-Put in it, little water just enough to make a fine paste (not too thin nor very thick-just as made for bhajiyas/ bhonda/ pakodas) and mix well.
6-Now apply this paste on the back side of the leaf. Then place another leaf over it and apply the paste over it. Like this you can put 3-4 layers of leaves.
7-Then make a roll of it beginning too roll from the base of the leaf. Make more rolls like this of 3-4 leaves in each.
8-Now put it in a cooker for 15 minutes (without the pressure) or give equal amount of steam in another vessel to cook it.
9-Then remove the rolls and cut into small pieces.
10-Now heat oil in a deep pan and season it with mustard seeds and  seeds.
11-Add to it the cut rolls and fry them properly on a slow flame till reddish in colour.
Serve hot with kadhi.
