Meat Rogan Josh
Cooking Time : 45-50 Minutes
Serves 4
Ingredients:
1 lb boned meat (lamb or steak)
4 tablespoons corn oil
1 medium onion - chopped
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
3 cardamoms
3 cloves
1 bay leaf
1 cinnamon stick
1 teaspoon paprika powder
1 teaspoon chilli Masala
1/4 pint natural yogurt
1 tablespoon poppy seeds
1 oz chopped almonds
pinch of saffron
1/4 teaspoon garam masala
12 fl. oz. water
salt to taste
Method:
1-Heat oil in pan and fry onion until golden brown and slightly crisp.
2-Add cardamoms, cloves, bay leaf and cinnamon.
3-Add ginger and garlic, then immediately add meat.
4-Seal meat, then add chilli masala, paprika and saffron - mix for approx. 2 minutes.
5-Add beaten yogurt, 1 tablespoon at a time, mixing continuously.
6-Cook for 5-8 minutes, until the oil rises.
7-Crush poppy seeds a little, then add together with almonds - cook for a further 2 minutes.
8-Add salt and approx 1 1/2 cups water and simmer for approx 40 minutes until meat is tender.
9-Add garam masala and serve.
