Serving: 6 Preparation time: 60 mins Ingredients: Bittergourds: 12 Salt: To taste Coriander powder: 2 powder: 2 ts Turmeric powder: 3/4 ts Dry mango powder: 1 1/2 tb Red chilly powder: 3/4 tb Garam masala powder: 1/2 tb Fennel seeds: 3 1/2 tb Oil: 8 tb Large onion: 1 Sugar: 1 tb The Steps: Preparation : 1) Wash and scrape the bitter gourds. 2) Slit and remove seeds. 3) Apply salt and keep aside for ½ hour. 4) Dry roast all the masala powders separately. 5) Dry roast the fennel seeds and grind coarsely. 6) Mix all the powders together. 7) Peel and mince the onions. 8) Heat 1½ tb of oil and saute the onions till golden. 9) Add the masala powders, salt and sugar. 10) Wash the bitter gourds and wipe dry. 11) Fill the masala mixture in the slit bitter gourds. 12) Heat the remaining oil in a wide vessel. 13) Neatly arrange the bitter gourds. 14) Cover with a tight lid and cook over low heat till cooked. 15) Uncover and fry the vegetables till lightly browned. Serve hot. Calories: 283 per serving Suggested Accompaniments: Rotis Left - Over Ideas : Cut the leftover karelas into 1 inch pieces and add it in any tomato based gravy.
