Lotus Root Curry
Serving: 4 Preparation time: 30 mins Ingredients: Spinach or kohl greens: 1 bunch Kashmiri red chillies: 4 Ginger: 1 ts Garlic: 1/2 ts Turmeric: 1/4 ts Garam masala: 1/2 ts Salt: To taste Mustard (or other) oil: 2 tb Plain curds: 1/2 cup Lotus roots: 25 The Steps: Pre - Preparation : Grate the ginger and garlic. Preparation : 1) Clean and chop roots into 1. 2) Wash, drain and keep aside. 3) Clean and chop spinach into 1. 4) If using kohl greens, boil till half tender. 5) Wash drain and keep aside. 6) Heat oil, add ginger, garlic and stir for a minute. 7) Add chillies, stir. 8) Add turmeric and salt. 9) Add curds and stir continuously till whiteness is gone completely 10) Add spinach roots and cook till gravy is almost semi-solid. 11) Sprinkle garam masala, stir and remove from fire.
