Konkani Dish Potato sabzi

Cooking time: 25 Minutes

Serves : 4

Ingredients :

5 peeled Potatoes
2 Tomatoes
2 tbsp oil
1/2 tsp urad dal
1/2 tsp coriander seeds
5 methi seeds
1/4 tsp Asafoetida
1/4 Mustard seeds
1 tbsp grated Coconut
3 red chillies
Few coriander seeds
Salt to taste

Method :

1-Cut potato, mix salt and keep aside for 10 minutes and deep fry.
2-In a pan fry red chillies, urad dal, coriander seeds, methi seeds and mustard seeds.
3-Ground coconut and other ingredients coarsely.
4-Take oil in a pan and add to it the mustard seeds, turmeric powder, hing, chopped tomatoes and curry leaves.
5-Fry it for few minutes, add the ground ingredients and then add 1/2 cup of water.
6-When the water starts boiling, add fried potatoes, coriander leaves and salt to taste.
