Kerala Fish in Coconut Milk
Serving: 4 - 6 Preparation time: 25 mins Ingredients: White fish: 1 lb Vegetable oil: 4 tb Large onion: 1 Fresh ginger: 1 Green chillies: 5 Turmeric: 1 ts Potatoes: 3 Thin coconut milk: 6 fl oz Thick coconut milk: 3 fl oz Malt vinegar: 3 tss Salt: To taste Coriander: To garnish The Steps: Pre - Preparation : 1) Cut the fish into large pieces and slice the onion, ginger and garlic fine. 2) Deseed and chop the chillies fine and grind the turmeric. 3) Cube the potatoes. Preparation : 1) Rub the fish pieces with some salt and set aside. 2) Heat oil in a wok and fry the onion, garlic, ginger and green chillies until the onion is golden brown. 3) Reduce the heat and add the turmeric, potatoes and salt to taste. 4) Mix well, then add the thin coconut milk and simmer for about 10 mins until the potatoes are nearly cooked. 5) Drain the fish and add to pan. 6) Carefully cover fish with gravy and simmer gently until nearly cooked, about 10 mins, stirring gently. 7) Add the thick coconut milk and vinegar and bring it to a quick boil without covering the pan. 8) Garnish with coriander and serve hot with boiled rice or bread.
