Kashmiri Mango Chutney
Preparation time: 20 mins Ingredients: Mangoes: 1 kilo Red chillies: 50 gms Garlic: 20 gms Ginger: 50 gms Mustard (yellow): 20 gms Sugar: 100 gms Salt: 25 gms Vinegar: 250 ml Mustard oil: 10 ml The Steps: Preparation : 1) Clean the mangoes well. 2) Peel and slice them. 3) Boil vinegar with sugar after keeping some vinegar aside for use to grind with the other spices. 4) Cool the vinegar sugar mixture. 5) Grind all the spices and mango slices using the vinegar kept aside. 6) Mix all ingredients together. 7) Heat mustard oil. 8) Cool and pour over the mango mixture. 9) Bottle and use when required. Calories: 1171 Suggested Accompaniments: As sandwich spread, with puri or chapattis, or with plain rice and curry. Left - Over Ideas : To give it a different flavour, add in carrots, ginger and green chillies.
