Preparation time: 5 hrs Ingredients: Gram flour: 350 gms Green chilli: 1 tb Mustard seeds: 1 ts Lemon: 1 Ginger: 1 tb Turmeric powder: ½ ts Soda bi-carb: 1 ts Green coriander: 1 tb Yogurt: 1 cup Coconut: ½ cup Oil: 2 tb Salt: To taste The Steps: Pre - Preparation : 1) Chop the green chillies, coriander and the ginger. 2) Grate the coconut. Preparation : 1) Take gram flour in a bowl. 2) Add beaten yogurt and warm water. 3) Whisk well to remove all lumps. 4) The mixture should have a thick consistency. 5) Add salt and cover it and leave it to ferment for 3-4 hours. 6) Make a paste of ginger and green chillies. 7) Add this paste to the fermented mixture. 8) Add turmeric powder and correct seasoning. 9) Keep the steamer ready on the flame. 10) Grease a dhokla mould or a shallow cake tin with a little oil. 11) In a small bowl, take 1 ts soda bi-carb, 1 ts oil and the juice of the lemon. 12) Mix well and add this to the gram flour mixture. 13) Pour the batter into the greased mould and steam for 10-12 minutes. 14) Cool for sometime. 15) Cut into squares and arrange in a serving platter. 16) Heat oil in a small pan. 17) Add mustard seeds. 18) When the seeds begin to crackle, remove and pour over the dhoklas. 19) Serve garnished with chopped green coriander leaves and grated coconut.
