Curried Cauliflower and Potatoes
Serving: 5 Preparation time: 25 mins Ingredients: Ginger root: 1/2 /var/www/hin seeds: 1 ts Black mustard seeds: 1 ts Ghee: 4 tb Potatoes: 3 Cauliflower: 1 Tomatoes: 2 Turmeric: 1/2 ts Coriander: 2 ts Garam masala: 1/2 ts Brown sugar: 1 ts Salt: 1 ts Coriander leaves: 3 tb Hot green chillies: 2 The Steps: Pre - Preparation : 1) Mince the chillies and dice the potatoes and tomatoes. 2) Cut the cauliflower in flowerettes and chop 3 tb coriander coarsely. Preparation : 1) Combine chillies, ginger, /var/www/hin seeds and mustard seeds in a small bowl. 2) Heat ghee in a large pot. 3) When hot, add the spices. 4) When the mustard seeds start to pop, drop in the potatoes and cauliflower. 5) Fry for 4 mins or so. 6) Add the tomatoes, turmeric, coriander, garam masala, sugar, salt and half the minced coriander. 7) Mix well, cover and gently heat for 15 mins. 8) If the vegetables start to stick, add a few drops of water. 9) Top with remaining coriander and serve.
