Coriander Fish
Preparation time: 45 mins
Ingredients:
Any white fish: 4 lb
Garlic: 8 cloves
Hot chillies: 3
Ginger: 1 inch piece
Coriander: 1 bunch
Coriander seeds: 1 tb
Brown sugar: 1 ts
Turmeric: 1 ts
Black mustard: 1/2 ts
Fenugreek seeds: 1/2 ts
Salt: 1 tb
Lemon juice: 1/2 cup
Vegetable oil: 1/2 cup
Onion: 2 cups
Tomato: 1 cups
Garam masala: 1/2 ts
The Steps:
Pre - Preparation:
Chop the onion and tomato.
Preparation :
1) Wash and pat dry fish.
2) Sprinkle 1 ts salt inside and set aside.
3) Pre-heat oven to 400 degrees F.
4) Blend garlic, chilly, ginger, 1/2 the coriander, coriander seeds, brown sugar, turmeric, mustard seeds, fenugreek seeds, salt and lemon juice till it all becomes a smooth paste. (Add some water if needed).
5) Fry onions till they are soft and golden brown.
6) Add the blended masala and cook till most of the liquid is gone and it starts to leave the sides of the pan.
7) Add the tomatoes and garam masala.
8) Fry for 2 mins more and remove.
9) Coat one side of fish, stuff 1 1/2 cups masala inside.
10) Close opening, spread the rest of the masala over it.
11) Cover tightly and bake for about 25 mins.
12) Grill for 1 or 2 mins in broiler and sprinkle the remaining coriander.
