Chicken in Spinach Sauce

Serving: 8 Preparation time: 45 mins Ingredients: Vegetable oil: 1/2 cup Bay leaves: 6 Cardamom pods: 12 Cinnamon stick: 4 inch piece Whole cloves: 10 Dried hot chillies: 4 Chicken: 4 1/2 lbs Raisins: 1/2 cup Plain yogurt: 3/4 cup Salt: 2 1/2 ts Black pepper Pepper: 1/2 ts or to taste Fresh ginger root: 4-inch piece Fresh hot green chillies: 4 Fresh coriander leaves: 2 bunches Spinach: 20 oz Grainy mustard: 3/8 cup The Steps: Pre - Preparation : 1) Skin the chicken and cut into servings and grind the black pepper. 2) Chop the ginger coarsely and spinach. Preparation : 1) Heat oil on medium-high in a large wide non-stick pan. 2) When oil is hot, add bay leaves, cardamom, cinnamon, cloves, red chillies. Stir. 3) Add chicken pieces and brown. 4) Add raisins, stir, then add yogurt, salt, black pepper and pepper to taste. 5) Stir and bring to simmer. 6) Cover tightly, turn to low and simmer for 15 mins. 7) While chicken simmers, put ginger in the container of blender along with 3 tb water; blend until it is a smooth paste. 8) Add green chillies and coriander and continue to blend. 9) Add lightly drained spinach. Blend briefly. 10) Spinach should have coarse texture. 11) When chicken has cooked for 15 mins, remove cover and add green sauce. 12) Stir. Bring to a simmer, cover again and cook for 10 mins or until chicken is tender. 13) Turn chicken a few times during this period. 14) Remove hard spices before serving.
